Meat Miso Stir-Fry with Shiitake Umami

Ingredients (serves 2):
- Ground pork: 200 g
- Cabbage: 1/4 head
- Grated ginger: 2 tsp
- (A)Miso: 2 tbsp
- (A)Soy Sauce、酒、Mirin 1 tbsp each
- (B)Potato starch: 1 tsp
- (B)Water: 1 tbsp
- Shiitake powder: 1/2 tsp
Method:
- Roughly chop the cabbage. Mix ingredients (A) together.
- Cook ground pork and ginger in a frying pan. Once cooked, add the cabbage and stir-fry.
- When softened, add (A) and shiitake powder. Finally, stir in (B) to thicken.
Other uses:
Also works great in pasta sauces, curry, hamburg steak, and vegetable side dishes.
Since no salt is added, it’s perfect for reduced-salt cooking! The natural umami enhances the perception of saltiness, helping to cut down on salt naturally.
