Dry Rice Koji Produced in West Japan

A high-quality dry rice koji that is made in Okayama, Japan. This dry koji is carefully dried slowly with warm air so the koji bacteria are still intact.

You can use it as an ingredient for amazake, miso, salt koji, and other Japanese fermented foods.

How to Rehydrate the Dry Koji

Combine 500g of dried koji and 200 cc of hot water (40~50°C) in a closed container. Let it sit for about 30 minutes. Be careful not to let the temperature exceed 60°C because this will weaken the koji bacteria. Also, please note that if the temperature is too low, the osmotic pressure will prevent the rice from softening all the way to the core.
