The predecessor of the manufacturer of the "Ultimate All-Purpose Umami Dashi" originally worked in fish processing and the manufacturing and sales of delicacies. While processing massive amounts of fish every day, he was deeply troubled by the large amount of waste—about 60% of the fish, including the heads, organs, and bones.
"Is there a way to use the entire life of the fish we've been blessed with?"
This prompted the manufacturer to begin an intensive research and development effort for new machinery. Over the course of about 40 years, they finally established a unique, cutting-edge manufacturing method that incorporates the natural phenomena of "vacuum," "pressure," and "filtration." By placing the whole ingredients into this special machine, they succeeded in removing excess fat while peptizing the proteins.
