Our dashi combines organic kombu, organic shiitake mushrooms, organic rice koji, and organic onions—all certified organic under Japan’s JAS standard—plus mineral-rich salt from Goto-nada, Japan. By blending these ingredients in perfect balance, we’ve created a flavor that is both deep and gentle.
Organic Kombu
Made from rare, organic ma-kombu harvested in Hokkaido, carefully roasted and ground into powder. The resulting taste goes beyond umami, with a rich depth perfect for not only Japanese cuisine but also a wide range of dishes. Roasting enhances the natural bounty of the sea.
Organic Shiitake
Our organic shiitake powder is made by roasting and grinding organically cultivated dried shiitake mushrooms. A quick sprinkle infuses dishes with guanylic acid, adding depth and richness to the flavor.
Organic Onion
Made from organic onions dried raw and ground into powder. When heated during cooking, their sweetness blooms, harmonizing beautifully with other ingredients.
Organic Rice Koji
Rice koji is a fermented rice made from inoculating steamed rice with Aspergillus oryzae or the koji starter. This organic rice koji is powdered from rare, dried white rice koji made only from domestically grown organic brown rice. Koji not only enhances umami but also supports daily gut health.
