Safe and Secure Organic Premium Sencha

Sencha

Since the start of production in Taisho 10 (1921), tea farmers have worked together and strived to make delicious tea. From creating tea gardens to picking tea and packing products, meticulous and responsible integrated production is the cornerstone of making delicious tea.

Commitment to Organic Cultivation

Harima Farm

The secret to making delicious tea is to cultivate strong tea trees that can resist pests and diseases. The key to this is "soil creation." For the 120 hectares of the farmers' tea gardens, we apply high-quality organic fertilizers such as fish meal to create healthy and high-quality soil.

Furthermore, we analyze the soil once a year and adjust the fertilizers accordingly to maintain land suitable for tea cultivation.

Certified under the Organic JAS System

Organic JAS

The Organic JAS standards (Japanese Agricultural Standards) define "organic agricultural products" and "organic processed foods," and only those that meet these standards are allowed to display the name "organic cultivation" and the Organic JAS mark.

Key Points of Organic JAS Standards

  • For production, no prohibited pesticides or chemical fertilizers have been used for over 3 years.
  • No genetic modification techniques have been used.
  • From tea fields to production, processing, and shipping, the products are distinguished from other general teas, and this is documented.
  • Compliance with these points is annually reviewed by a certification body registered with the Ministry of Agriculture, Forestry, and Fisheries.

Two Types of Flavors: Deep Steamed and Light Steamed

Sencha

Characteristics of Fukamushi - Deep Steamed Tea

By steaming the tea leaves at a high temperature for a long time, it retains a vibrant green color and rich aroma. Its taste is rich yet soft, with little bitterness.

Characteristics of Asamushi - Light Steamed Tea

By steaming the tea leaves at a low temperature for a short time, it retains a bright color and refreshing aroma. It has a less bitter and astringent taste, offering a light flavor.

Benefits of Sencha

Sencha is rich in catechins, which can help with virus prevention and antibacterial actions, keeping your mouth fresh. It also contains polyphenols, making it a good choice for those concerned about health checkup results. With zero calories and less caffeine than coffee or black tea, it’s a great choice for daily relaxation or can be enjoyed in dishes like ochazuke.

How to Brew Premium Asamushi Sencha

How to Brew Premium Sencha

Kawashimaya's organic sencha is of "premium" quality. Higher-grade tea contains more umami components (theanine), so we use 75°C water to suppress bitterness and bring out the umami.

How to Brew Warm Deep Steamed Sencha

Ingredients (for 1 person)

  • 1 organic sencha tea bag
  • 200ml of 75°C water

Instructions

  1. Pour 200ml of 75°C water into a cup and add the tea bag.
  2. Steep for about 2 minutes, then gently move the tea bag up and down to adjust the strength to your liking.
  3. Remove the tea bag and enjoy.

For the best results, use Japanese soft water or tap water instead of high-mineral water.

How to Brew Cold Sencha

Ingredients (for 2-3 people)

  • 3 organic sencha tea bags
  • 500ml of water

Instructions

  1. Pour 500ml of water into a bottle and add 3 tea bags.
  2. Refrigerate for about 24 hours.
  3. After brewing, shake the bottle about 10 times and remove the tea bags to complete.

Q&A about Sencha

What is Sencha?

Sencha is a type of green tea and is the most widely enjoyed tea in Japan. It is the most commonly consumed tea in Japan. The tea leaves are grown outdoors where they receive plenty of sunlight, and are steamed, rolled, and dried immediately after harvesting. As a result, the tea leaves are thin and needle-like in shape.

How should I store Sencha?

Tea is a very delicate product that can deteriorate due to temperature, humidity, and light. After opening, store it in an airtight container such as a tea canister in a cool, dark, and dry place. Since tea leaves absorb odors, be careful of odor transfer if storing in the refrigerator. For long-term storage, you can keep it in the freezer, but be careful of condensation when taking it out.
