We have blended six types of unfiltered fruit vinegars produced by an established Italian brewing manufacturer in our original, easy-to-drink blend. Only organic vinegar is used as the raw material. No sugar, flavorings, or additives are used. Under the supervision of a registered dietitian, we have created a blend that is easy to drink and nutritionally balanced. Please mix with water, carbonated water, or soy milk and enjoy. Since it is vinegar, it can also be used for making dressings and cooking, not just for drinking.

All the raw materials for organic fruit vinegar are unfiltered and unheated vinegar. The reason for not filtering or heating is that we can deliver the acetic acid bacteria that vinegar contains to our customers as they are. Acetic acid bacteria are essential for making vinegar. The power of these bacteria is also drawing attention for improving problems caused by modern lifestyles.

* Normal vinegar is usually filtered (a process of removing acetic acid bacteria and impurities using filters or chemicals) during product manufacturing. Many vinegar products are also heat-treated. Filtration keeps vinegar clear and transparent. Additionally, heat treatment ensures the quality of the product remains consistent, making it easier to distribute.
When vinegar is manufactured while keeping the acetic acid bacteria alive, the content of the container becomes cloudy and unappealing. Furthermore, when the temperature exceeds 30 degrees Celsius, the bacteria become more active, resulting in increased cloudiness and eventually the acetic acid bacteria solidify into a jelly-like substance and settle. (This does not affect the taste and is harmless to the human body.)

Unfiltered and unheated vinegar is troublesome from the perspective of sales and distribution, but Kawashima-ya believes that it is more important to take advantage of the nutrients inherent in vinegar.
Points to Note about Unfiltered Vinegar
Since Kawashima-ya's unfiltered vinegar contains live acetic acid bacteria, there may be rare occasions when a film-like substance forms on the surface of the vinegar when the temperature exceeds 30 degrees Celsius. (*Although the cloudiness is not visible to the naked eye due to bottling through a cloth to remove impurities, it contains plenty of live acetic acid bacteria that are finer than the cloth.) The film is not harmful to the human body but it can spoil the flavor of the vinegar. Therefore, Kawashima-ya recommends the following methods:
- If unopened, store in a cool, dark place away from high temperatures and humidity.
- After opening, it is recommended to store in the refrigerator.
- Before use, shake well each time.
- Use as soon as possible after opening.

Most of the "drinking vinegars" available in the market have large amounts of sweeteners added to make them easier to drink, or are mixed with flavorings or fruit juices. Kawashima-ya's organic fruit vinegar uses only vinegar as its raw material. For those who are concerned about their health and want to incorporate vinegar into their daily lives, we recommend trying organic fruit vinegar even in small amounts.

Our organic mixed vinegar is free from sugars and fragrances. Although we have formulated it to minimize the strong acidity typical of vinegar, it may still be a bit challenging for those trying vinegar for the first time. Here are some recommended ways to enjoy it.
For Advanced Drinkers, Try Mixing with Carbonated Water
For those accustomed to drinking vinegar, mixing it with carbonated water without adding sweetness is recommended. Mixing about 10% vinegar with carbonated water gives you a moderately acidic taste with a hint of fruit vinegar's sweetness, making it easier to drink. It tastes even better with a little lemon juice added to carbonated water. Especially when you want to refresh your concentration, after exercise, or after taking a bath, it tastes particularly delicious.
For Beginners, adding it to juice or milk is Recommended
For beginners in drinking vinegar, it is easy to drink by adding about 10% to fruit juice (apple, orange, grape juice, etc.) or vegetable juice. The vinegar's acetic acid bacteria and citric acid are added to your usual juice. Mixing with soy milk is also easy to drink. Alternatively, mix about 10% vinegar with carbonated water and add honey or oligosaccharide to your liking to make it easier to drink.
Of Course, It Can Also Be Used in Dressings and Cooking
Our organic mixed vinegar can be used not only for drinking but also as a seasoning vinegar. Please use it for stir-frying, pickling, and other everyday cooking. Mixing it with olive oil, flaxseed oil, or MCT oil, and adding salt or soy sauce, will make a refined dressing.
