What is Sannen Umeboshi?



Sannen Umeboshi (three years matured Umeboshi) is a pickled raw plum with salt which carefully dried under the sun and processed thoroughly aged in a barrel for three years long.

Even though the Umeboshi that just got dried up taste salty, by the process of pickling them over two and three years, the sharp taste of salt will vanish and turns into a rich umami flavour.

Three Years Matured Carefully


"Three years matured Umeboshi" is made using carefully selected ingredients, thoroughly processed in a long period of time with traditional recipe by the manual labour.

The completely ripe plums from the pesticide-free organic farming are carefully sorted and selected also by the manual labour.
After carefully sorted one by one, the chosen plums will get immerse with natural salt which rich in minerals and then the plums will get dried thoroughly under the sun.
After that, the plums will get immerse in a barrel and they will let the plums to get matured for three years inside the barrel.



The Making of Sannen Umeboshi

Why the Traditional Umeboshi is Good

Umeboshi is a very good preserved food.
In the traditional recipe, if the Umeboshi made without adding too much additive, it is said that the salt content is over 20%.
If the environment is suitable to preserve Umeboshi without any contamination, there are Umeboshi which can still be eaten even after over 100 years.

But, lately there are a lot of stores that selling ‘seasoned umeboshi’.
After being dried under the sun and immersed in the salt, they add numerous amounts of additives such as chemical seasonings, sweeteners and acidulant for the ‘seasoned umeboshi'.

First of all, if you enjoy to consumes it as it is, you can completely taste the difference from the other kind of umeboshi.


Because it goes deliciously compatible with hot rice, you can eat it with rice, as well as to make it with rice balls, put it in rice porridge, cook it with rice, and make it into seasoned rice with other various ingredients.

As a food ingredient, it is also recommended as a hidden taste of cuisine, such as shredded plums, salads and pasta.

How to Enjoy Sannen Umeboshi


Also, as a slightly different way, you can freeze the umeboshi in a freezer, the texture of umeboshi will change and you can enjoy it as a dessert.
Other than that, we recommend to consumes it together with bancha (a kind of Japanese green tea).
