Organic Sannen (Three Years Matured) Nanko Ume is made with traditional methods. The entire process takes more than three years. From soaking the raw plums in mineral salt, then drying it under the sun, before allowing the plums to mature inside the barrels until it’s get completed. The three years maturing process creates a unique flavour consisting of mild and rich sour and salty flavour. As compared with umeboshi pickled with honey or preservatives, we recommend trying traditionally and organically made umeboshi such as the Organic Sannen (Three Years Matured) Nanko Ume.

Varying Tastes of Umeboshi in Maturing Process

Additive free Three sannen Nanko Ume

You can consume umeboshi immediately after its fermentation. The umeboshi that are freshly done after being dried can taste really salty. After the maturing process, the sharpness in umeboshi will slowly fade away and the sourness turn mild.

At Kawashima-ya, we recommend keeping umeboshi for longer as it will be more delicious. The unique burst of umami flavour as well as the tartness of plum are sure to make an entrance. Weaves of salt and plum creates one rich flavour that increasingly tastes better year after year. Therefore, the gradual period of maturation results in different flavour from one to another.

Umeboshi can be kept for years, even decades. It is said to taste the most delicious in its third year. After that timeframe, the flesh becomes brittle and the taste turns mellow. The great taste of aged umeboshi differs from one to another, therefore it’s difficult to determine the true expiration date.

If allergic reaction or any negative symptoms surface, discontinue consumption immediately.

Three years aged Umeboshi cannot be mass-produced

Organic agricultural practices are often more complicated (and take longer) than using pesticides to manage crops. Therefore, there is a limit to how much can be produced. The organic plums are dried in the sun, and aged inside the ume barrel. As the Ume is produced without the use of synthetic or chemical pesticides or fertilizers, only a limited number of plums can be manufactured. In the same way, the organic price tag more closely reflects the true cost of growing the food.

お客様の声1

I can taste the mild saltiness and umami flavour well.
Since additives are not used, it is safe for consumption. As the plums was matured for 3 years, the saltiness is mild but rich in umami. I will frequent this manufacturer' product again because of the quality and great service by the Japan Store.

The hallmark of good ume- thick and succulent.
I was looking for plums that could withstand the colder months, and sannen umeboshi appears to be a good choice. The plums' skin is thick, chewy but soft, sour but savoury. . I think the Ume will complement the Japanese food called Ochazuke, if not enjoy it on a laidback afternoon with some brown rice tea.

The most delicious Umeboshi I've ever tasted.
I've tried various Umeboshi produced by outstanding manufacturers from Ryujin and Takeuchi Farm. They were both very delicious. I must say however, that the larger portion of Umeboshi from Takeuchi Farm stood out to me. I will repurchase.

The amazing taste of sannen umeboshi.
This distinct flavour was exactly what I was looking for! I have repurchased.

Affordable and organically cultivated Ume.
I heard rumours that a lot of pesticides are used when cultivating plums. Since then, I decided not to consume too much of Umeboshi. However, this pickled plum changed my course! Prices tend to be higher for organic than conventional products. Not only is it delicious and organic, it is also very reasonable. I can't wait to repurchase.

Sannen Umeboshi certified by JAS

Organic JAS Certificate

The Organic JAS (Japan Agricultural Standard) Certification is used to refer to agricultural crops produced without pesticides and chemical fertilizers.

Established by the Minister of agriculture, Forestry and fisheries, the Organic JAS logo is applied to agricultural products and processed foods conformed to the Organic JAS. Without the Organic JAS logo, products cannot be labelled as “organic”. In 2001, the law concerning Standardization and Proper Labeling of Agricultural and Forestry Products was amended, clarifying the labeling system for organic goods.

It is common to use pesticides and fertilizer for plum cultivation. The reason behind is simple. Plums without spots or blemishes are perferred. This perspective would place plums with blemishes at a disadvantage.

Does ordinary cultivated plums and organic plums taste different?

Plums raised without using chemicals and fertilizers have a stronger and more distinct taste, resulting in delicious pickled plum.

To be suitable for organic markets, the chain of organic production needs to be inspected and certified. Three-year aged umeboshi of Takeuchi Farm received the Organic JAS certification. With this mark, consumers can be rest assured by Takeuchi Farm's devotion to use organic farming as a way of producing food that respects natural life cycles, without relying on chemical substances such as pesticides and chemical fertilizers.

Manufacturer Introduction: Organic Kishu Nanko Ume

Tanabe City, Wakayama Prefecture is home of Kishu Nanko Ume. Built by Mr. Takeuchi, Takeuchi Farmers is committed to produce plums under a safe and secure environment.

At Takeuchi Farm, crops are produced without pesticides or chemicals. Therefore, natural insect repellent such as homemade liquid fertiliser composed of fish, crab, garlic, turmeric and more, are used on top of pyroligneous liquid.

organic unripe plum

Tanabe City, Wakayama Prefecture is blessed with temperate climate due to the presence of the Kuroshio Current- the warm northeasterly ocean current off the coast of Japan.

The high rainfall precipitations and long daylight makes it a suitable ground for growing plums. The high-quality plums are cultivated using medium-quality soil which absorbs much calcium during the growth period. "Uridani Ishi" is a stone common in this area which contains plenty of calcium necessary for plum growth.

Takeuchi Farm not only cultivates high quality plums using organic and traditional methods, but also involve hands-on in the entire process of packaging and shipping products to our consumers.

Organic raw plum

As plums are harvested in their unripe state in the morning, great care and deliberate skills are required to pick and sort them without causing any damage. The plums are usually divided into two standard sizes, small and large.

We are devoted to produce high quality plums and deliver carefully selected plums to our customers. We care significantly for the freshness of our products and will continue to explore creative ideas to transform Umeboshi into delicious juices, jams and wines.
