We use domestically produced organic soybeans and wheat with high rare value, sea salt from Ako, and underground water from the clear stream Sugihara River in Kita Harima, Hyogo Prefecture.
Craftsmen carefully make koji from the place where soybeans are steamed and the place where wheat is roasted.
The ingredient mixture is placed in a wooden vat that has been used for over 100 years, and after an aging period of one to one and a half years, the moromi is slowly squeezed to make soy sauce.

What Is Dark (Koikuchi) Soy Sauce?
It is a versatile soy sauce that can be used for a wide range of purposes, and goes well with anything from dipping to cooking.
The salt content of dark soy sauce is about 16%, which is modest compared to the familiar light soy sauce (salt content 18-19%).
* Since the color of soy sauce is dark, please refrain from using it for simmered dishes or light colored dishes, or use a small amount.
To accompany ingredients such as cold tofu and sashimi.
For grilled fish, omelet, grilled eggplant, etc.
If you cook stir-fried food, meat or sautéed fish, the fragrance will be more pronounced.
