Rapeseed oil is rich in oleic acid, that classified as a mono-unsaturated fatty acid, one of the fatty acids which are the main component of vegetable oils.
Oleic acid is said to have the effect of reducing bad cholesterol that causes arteriosclerosis without reducing good cholesterol.
It has stronger smell and color pigments than other oil because of the natural tocopherol (class of vitamin E compounds which have antioxidant activity) and natural chlorophyll and carotene dissolved in the oil that extracted from the "Tamajime" method.
We are using the pesticide-free "Kizakino" Rapeseed from Hokkaido Prefecture, Japan.
Through the "Tamajime" method, we are able to squeeze a very beautiful golden color oil.
The squeezed oil is slowly filtered using the luxurious handmade paper called washi. Then, it is hand-packed in a container to make the rapeseed oil that is rich in flavor.

About The Raw Material: Rapeseed
The origin of the raw material for this oil: rapeseed is from Hokkaido Prefecture or Aomori Prefecture, Japan.

Step 1. Roasting
The first step is roasting the raw material (rapeseed).
The rapeseed is roasted in a bowl heated with firewood.
It takes about 30 minutes to dry the rapeseed. This is done while adjusting the heat with the amount of the firewood.
About 50 kg of rapeseed can be roasted in one pot at one time. From that, the amount of oil squeezed is up to 15 to 18 liters.
If the seed is not well roasted, it will not squeeze enough oil.
But on the contrary, if the seed is over-roasted, it will cause bitterness.
So when the roasting takes place, the workers will check the seed's condition periodically while mashing some of the seed with their fingers.
Step 2. Cleaning
The next step is removing impurities from the rapeseed.
Once the roasting is done, the rapeseed is put in a sifter. This step is to remove the unnecessary stuff from the rapeseed.
Step 3. Grinding
The third step is to grind the seeds using the roller in a rolling mill. The grinding step will tear the seed's skin.
Step 4. Steaming
The fourth step is put the grinded rapeseed in a wooden pail and place it on the top of special steamer.
By using the heat from burned firewood, the steam vapor will appear.
Set the pail on the top of the steamer.
There are small holes at the bottom of the pail, so the steam can come from underneath it. It is an arrangement so the steam would not cut through the pail.
The steaming is done while adjusting the heat from the firewood.
By steaming the seed, the oil will expand and make the oil squeezing step much easier.
After 5 minutes of steaming passes and the entire pail are full with the steam vapor, it shows a good steamed sign.
Step 5. Break
This step is cooling down the steamed rapeseed, it's called break.
At this stage, the workers spread the steamed rapeseed to cool off the steam. Once the steam blows away, they will place a wood-made oil filtering mat underneath a pail and packed the rapeseed tightly with the mat.
This oil filtering mat is one of the essential tools for the traditional oil squeezing and characterized because it was made with human hands.
These handmade mats are suitable for oil squeezing because they have moderate strength and softness, and there is no excess oil other than rapeseed oil itself.
It is a custom-made product by a wig maker, and currently, there are only a limited number of places that can be manufactured nationwide Japan.
The workers wil put the Tamajime ball (heavy, metal-made weight to squeeze the oil) to the wood-made oil filtering mat filled with the rapeseed.
By stuffing the rapeseed while applying moderate pressure from the Tamajime ball, the oil becomes easier to squeeze.
Step 6. Squeezing
The workers put the pail packed with mat filled with steamed rapeseed to the "Tamajime" squeezing machine.
This machine has a ball. The workers then add weight to the ball slowly while the oil is being squeezed.
While carefully making fine adjustments, 1 to 2 tons of weight is added to the ball.
After a while, due to the weight of the ball, a fine and golden oil overflows from the pail.
The method of squeezing the oil by the weight of the ball is called "Tamajime" method.
Currently, the factories which produce by this "Tamajime" method is rare. There only are a few in this country.
The freshly squeezed oil has a thick, dark color. It also has a strong aroma of rapeseed.
The residue of squeezed rapeseed is used for farming as organic fertilizer.
Step 7. Filtering
Hiraide Oil Store uses the specially hand-made, cylindrical paper filters (washi) to filter the rapeseed oil.
Place open the cylindrical handmade paper in a grid-like container and pour rapeseed oil into it.
They then wait until the oil to be naturally filtered while taking time slowly.
Using hand-made paper for filtering is a unique Japanese tradition.
When the oil comes out from the filter, the rapeseed oil is done.
Step 8. Bottling and Labeling
The freshly made oil is gathered in a small stainless tank.
The bottling step is all done by hands.
At last, the workers will stick the label on the bottle, and now the oil product is ready to go.
Normally, there are no pre-made stocks in the Hiraide Oil Store. The products that have been completed on that day are shipped immediately. This is how The Hiraide Oil Store make their oil.

Hiraide Oil Store's Principle
The Hiraide Oil Store's principle is to make "Natural oil with a nice fragrance and delicious flavor as great as possible". This principle has not changed since the early Showa Era (1926–1989).

Most of the edible oils currently sold in supermarkets and department stores are extracted by chemical processing in an efficient way.
By applying high temperature and pressure and chemical treatments such as deoxygenation, degumming, and deodorization, that is possible to extract cheap rapeseed oil with uniform quality efficiently and without waste.
However, in this way, the oil will deteriorate.
Also, the mellow and golden shades of rapeseed oil are greatly diminished.
The rapeseed oil from Hiraide Oil Store uses rapeseed from Hokkaido Prefecture for almost all the raw materials. The rapeseed used are only the one with the big grain, and have a moisture content of around 8%.
There are 3 "Tamajime" balls in the oil mill, and two to three workers squeezing the rapeseed everyday.
About The Traditional Squeezing Method: Tamajime Method
It is method to squeeze oil slowly over time under low pressure and normal temperature using special machine called the "Tamajime" squeezing machine.
The history of "Tamajime" method is old,
And it seems that the manufacturing method had already been established in the middle of the Edo period.
In the past, many manufacturer used the "Tamajime" method, but now only a few small and medium sized companies are keeping the tradition.
Oil made from the "Tamajime" mehode is a very valuable oil, it is less than 1% in terms of overall share.
The generally distributed rapeseed oil uses petroleum solvents and chemicals for deodorization and decolorization, etc.
Therefore, it is not very usable.
On the other hand, "Tamajime" method does not generate frictional heat because it is squeezed for a long time under low pressure and at normal temperature. So there is no need to do unnecessary processing. The finished product is an extra virgin oil because it is simply a filtered squeezed oil.
It is a product that is hard to enter the ordinary supermarkets.
