At Takeuchi Farm, in order to deliver products safely and securely to the our customers, we use wood vinegar as a repellent; as well as garlic, fish and oyster as foliar application for pickling process. They are later soaked in mineral salt and dried under the sun.

Organic Sannen (Three Years Matured) Nanko Ume is made with traditional methods. The entire process takes more than three years. From soaking the raw plums in mineral salt, then drying it under the sun, before allowing the plums to mature inside the barrels until it’s get completed. The three years maturing process creates a unique flavour consisting of mild and rich sour and salty flavour. As compared with umeboshi pickled with honey or preservatives, we recommend trying traditionally and organically made umeboshi such as the Organic Sannen (Three Years Matured) Nanko Ume.

Varying Tastes of Umeboshi in Maturing Process

Additive free Three sannen Nanko Ume

You can consume umeboshi immediately after its fermentation. The umeboshi that are freshly done after being dried can taste really salty. After the maturing process, the sharpness in umeboshi will slowly fade away and the sourness turn mild.

At Kawashima-ya, we recommend keeping umeboshi for longer as it will be more delicious. The unique burst of umami flavour as well as the tartness of plum are sure to make an entrance. Weaves of salt and plum creates one rich flavour that increasingly tastes better year after year. Therefore, the gradual period of maturation results in different flavour from one to another.

Umeboshi can be kept for years, even decades. It is said to taste the most delicious in its third year. After that timeframe, the flesh becomes brittle and the taste turns mellow. The great taste of aged umeboshi differs from one to another, therefore it’s difficult to determine the true expiration date.

Three years aged Umeboshi cannot be mass-produced

Organic agricultural practices are often more complicated (and take longer) than using pesticides to manage crops. Therefore, there is a limit to how much can be produced. The organic plums are dried in the sun, and aged inside the ume barrel. As the Ume is produced without the use of synthetic or chemical pesticides or fertilizers, only a limited number of plums can be manufactured. In the same way, the organic price tag more closely reflects the true cost of growing the food.

The Organic JAS (Japan Agricultural Standard) Certification is used to refer to agricultural crops produced without pesticides and chemical fertilizers.

Established by the Minister of agriculture, Forestry and fisheries, the Organic JAS logo is applied to agricultural products and processed foods conformed to the Organic JAS. Without the Organic JAS logo, products cannot be labelled as “organic”. In 2001, the law concerning Standardization and Proper Labeling of Agricultural and Forestry Products was amended, clarifying the labeling system for organic goods.

It is common to use pesticides and fertilizer for plum cultivation. The reason behind is simple. Plums without spots or blemishes are perferred. This perspective would place plums with blemishes at a disadvantage.

・Sannen umeboshi 1 serving

・Shoyu 1-3 drops

・Grated Ginger or ginger juice 1-2 drops



① Place the umeboshi plum in a tea cup with a few drops of soy sauce.
② Add freshly grated ginger and stir gently. Simmer for 1/2 minute.
③ Drink hot or at room temperature.

Tanabe City, Wakayama Prefecture is blessed with temperate climate due to the presence of the Kuroshio Current- the warm northeasterly ocean current off the coast of Japan.

The high rainfall precipitations and long daylight makes it a suitable ground for growing plums. The high-quality plums are cultivated using medium-quality soil which absorbs much calcium during the growth period. "Uridani Ishi" is a stone common in this area which contains plenty of calcium necessary for plum growth.
