Put water in a pan and heat it. When it reaches 65 degrees celcius, turn off the heat.
Add rice koji powder and stir with a whisk until there are no lumps.
Put it on low heat again, and when it warms to 65 degrees celcius, transfer it to a thermos.
After keeping warm for 8 hours or more, amazake is completed.
To keep it warm, make it at least 80% of the capacity of the thermos. (If the amount is small, the temperature tends to drop and saccharification may be insufficient.)
It can be stored refrigerated for 5 days to 1 week and frozen for 3 months.
